The equipment installation team at Schaumburg Specialties was approached by our long time valued customer PRETZILLA® and asked to install and certify six brand new Revent ovens at its manufacturing premises in Franklin, WI. Oven (and washer) installation is an integral part of our Equipment Servicing and Maintenance Program, so we were delighted to accept the challenge.

Since 1923, PRETZILLA® has been combining premium ingredients and highly skilled bakers to create the No 1 best-selling soft pretzel bread and bun brand in North America.

Today, its fresh and frozen soft pretzel buns, rolls and bites are drawing increasing numbers of customers across the country and experiencing significant year-on-year growth. Such rapid expansion meant that it needed to markedly increase its production capacity to meet demand.

Naturally, when such a prestigious commercial bakery came to us for help ramping up the efficiency and productivity of their manufacturing facility, we were only too happy to help!

 

The Challenge

The team at PRETZILLA® wanted our technicians to install and certify six brand new Revent 724 double rack ovens at its premises in Franklin, WI. These ovens – available through Schaumburg Specialties – hold one double pan rack or two single pan racks (max tray size 20” x 30”).

The first part of our challenge was to assemble the ovens in the position that PRETZILLA® required them on its production line. The ovens come in three large, heavy pieces – the back third of the oven chamber, the front third of the oven chamber (with the door) and the heat exchanger/control panel.

All these pieces have to be expertly put together, and then the steambox (a container filled with steel balls that retains heat to help the oven recover quickly and makes steam to give a superior finish to baked products) is added onto the heat exchanger.

Using a forklift truck and manpower, we maneuvered the ovens into position and assembled them on PRETZILLA®’s production line.

After the ovens had been assembled correctly, the next part of the challenge was to get them up and running and fully and seamlessly integrated into PRETZILLA®’s working operations.

 

Our Solution

Our team of technicians is highly skilled and vastly experienced and knew exactly what to do to execute the perfect installation for our client.

Having assembled the ovens, the next steps were all about connecting them to PRETZILLA®’s gas and water supplies and checking each oven’s settings to make sure they were firing on all cylinders. A big part of this was ensuring that the burner on each oven was functioning correctly and that the gas pressure was optimal, to create the baking perfection our client (and of course, Revent) are famous for!

We fired the ovens up and did all the safety checks, which involved using a meter to check the draft, the gas pressure, the composition of the flue gas (measuring the amount of carbon monoxide emitted) and the carbon dioxide levels in the exhaust gas. All these gas levels have to be spot on to ensure an oven flame that burns efficiently and effectively.

We also made sure that PRETZILLA®’s oven racks, including their oven lift, fitted perfectly into the new ovens, to ensure the continued smooth running of PRETZILLA®’s production line.

The final part of our installation work was to provide certification for our client of the burner’s combustion and gas pressure numbers, ie, the proof that their new ovens were functioning correctly.

Once this was completed, we worked with PRETZILLA®’s team to carry out a number of test bakes in the brand new ovens. Thankfully, everything had gone according to plan and the pretzel bread that came out of the newly installed ovens was baked to perfection!
