The Client
In 1955, Baker Boy’s founder Marvin Moos opened the first Baker Boy in Hebron, North Dakota, moving to Dickinson two years later. Marvin had served as a baker in the Navy during World War II and studied baking at Dunwoody Institute in Minneapolis, so it was no surprise that his bake shop prospered.
Such was the success of the bake shop that Baker Boy soon branched out into other businesses including a diner, pizza house and donut shop and in 1979, the Moos family built a 3000-square-foot facility in Dickinson to manufacture frozen dough products for the baking industry.
From its humble beginnings, producing just 40 cases of product on average per week, Baker Boy is now one of the leading providers of baked goods for foodservice, bakery, C-store and food manufacturing customers in America. Its huge 135,000-square-foot production facility is capable of producing over 50,000 cases of products each week, including donuts, pastries, pizzas, pretzels, breads, desserts, biscuits, icings and custom products.
Of course, when such a prestigious and long-time valued customer called on us to help boost the efficiency and capacity of its automated production line, we were only too happy to take up the challenge.
The Challenge
Baker Boy has a proven track record of providing tailored, premium, on-trend bakery solutions to a diverse range of markets, including foodservice, retail and custom markets.
Producing thousands of different products every day for such a variety of clients is no mean feat – and Baker Boy needed 80 super heavy duty racks that could accommodate large quantities of different types of goods, but were also highly mobile and easy to maneuver.
Much of Baker Boy’s work involves the use of specialized equipment and custom processes that cater to its many different clients’ requirements, so it was imperative that our racks were designed and built to withstand specific tolerances and had the ability to slot seamlessly into the different stages of the company’s automated production lines.
Naturally, food safety regulations and hygiene security also had to be a top priority when manufacturing equipment for use in food production.
The Solution
Our expert team of engineers and metal fabricators put their heads together and came up with a perfect racking solution for Baker Boys’ specific production requirements. Throughout the design and approval process, our team worked side by side with Baker Boy’s to ensure the racks we were designing were as strong, robust and durable as possible.
Made from 100% American, food-grade stainless steel, each double bay rack weighed in at a massive 710lbs and boasted 24 levels with a 48-pan capacity and 3” spacing.

Not only were the racks super strong and sturdy, they were also fitted with very heavy duty casters that made them extremely easy to maneuver. At Schaumburg HQ, the team tested the strength and mobility of the racks and found them to meet all the criteria of sturdiness and maneuverability that Schaumburg Specialties is famous for.

Once the first six racks were built, they were shipped to our automation/robotics manufacturing partner ABI Ltd in Ontario, Canada for testing. Schaumburg’s Eric and Freddye met with ABI at its HQ in Richmond Hill to discuss the test outcomes and ensure that the racks we were building met all the tolerances and criteria specified by Baker Boy.

Once ABI had fed back, Eric and Freddye (and racks!) returned to Schaumburg, where a few revisions were made. Once these had been approved by a delighted Baker Boy, our expert fabricators got on with the task of making the rest of the 80 racks for our valued client.
